 Boiled Asparagus with Roasted Peppers and Lemon Olive Oil:
I always like to make extra Veggie sides when I have a dinner party on Sunday... I like veggies and so do my kids...Crazy , right?...hahaha My Kristian loves asparagus so that is what I chose to make. I decided to boil them so that they would be figure friendly..haha... Then after they are boiled I scoop them from the pan with a slotted spoon and put them on the dish above. ( It was 3 bunches of asparagus from the food market) I am a little OCD, (Thanks Fergaze) So they have to face a certain direction. Half of them face one way, half of them face another.... then I add oil and lemon, salt, and pepper but the exact directions are below!!! Enjoy!!
3 bunches of Asparagus from Market (3 bunches is shown above)
3 Tablespoon of Lemon Flavored Olive Oil.....I like Sciabica's)
Salt & Pepper to season
1 Lemon cut into wedges
1/4 cup Roasted Red Peppers (use recipe from my blog)
1 juice from 1/2 of a lemon
First clean and snip asparagus ends. Then place in pan to boil (add water to cover asparagus). I use the pan above, you can use what works for you. When the asparagus is "fork" tender (10 minutes), then use a slotted spoon to place in a serving dish. After asparagus is place accordingly, drizzle with the Lemon olive oil, salt and pepper, and place roasted peppers like I did above. Cut the lemon wedges and place however you would like...Enjoy!!!
