Biscotti Di Tina
So I got this recipe from my Favorite Bestest Mother-In-Law in the world!!! She says that she can't bake but these Biscotti are her recipe and they are wonderful. I have tweaked them a bit..She doesn't add brown sugar, powder sugar or Vanilla Chips but I think every great recipe comes from a conglomerate of ideas and not just one...So this is my version of the biscotti with a bit of tweaking from my MIL's recipe. The above picture is one batch, I usually do two for an advent like Christmas or Easter because I keep some for my family and hand out the rest to the house I am visiting that holiday.  Hope you like them. Ingredients: ONE BATCH
4 Eggs
1/2 cup of sugar (White)
1 Cup of packed Brown Sugar
4 Teaspoons of Baking Powder
2 Sticks of Margarine
4 Cups of Flour
1 skin of Lemon
1/2 of a bag of Vanilla Chips  (using a 23 ounce bag)
1/4  cup of Powder Sugar
Easter Grass (like for stuffing baskets)
1/2 Bag of Hershey Kisses or Any Choc Candy to Decorate....In above pic I used Malt Balls
1 Dollie
1 Tablespoon Vanilla
1 Teaspoon of Salt
1 Cup of extra Flour for mixing Biscotti logs.
Preheat oven to 350. In a mixer add the eggs and sugars until fluffy. Add the margarine and vanilla and mix again. Add the lemon skin and mix. In a separate bowl combine the flour, salt, Baking powder. Add a little of the flour mixture at a time until well mixed, then add the chips. When Mixture is a nice solid dough mixture, take out of mixing bowl and place on the extra flour surface to make "logs". Look at pic above to see how I form logs. Place three or four on a tray (depending on size) and put into oven onto the middle rack. They will need to bake for about 15 minutes but keep an eye on them so as they will not burn. Once out of the oven, wait 15 minutes and then use the two spatulas that I have shown in the picture above to take the logs from the pan to the cooling rack, because if you use 2 spatulas then the logs will not brake in half. Once the logs are cooled down, they will cut easily. Cut them into 1/2" logs and place them on a Dollie tray. Then once you have a layer of biscotti down, sprinkle them with powder sugar (pic above)...Then keep layering and powdering until all biscotti are cut. To garnish add the Easter grass and Hershey Kisses.
