Fried Pork Chops with Broccoli Rabe
 
 
The other night I wanted some pork chops so I decided to make fried pork chops because they are my husbands FAV!!! I had some left overs and you know I hate wasting food, so this was a creation from my Frigde!!! Where (may I say) the best meals are made! This is a very quick meal and because it has all the veggies in it, all you need to do is pair it with a great little salad and some Italian bread. I hope you like these as much as my hubby!!! I know I did... PS- Bone In Chop, it gives much better flavor!!!  PSS- Remember I ALWAYS cook with my garlic in whole cloves because I am not a big fan of an extreme garlic taste.....Enjoy!!
 
 
Ingredients:
 
 
8 Pork Chops (Bone in)
1 cup of Broccoli Rabe
10 cooked Asparagus tips
1/2 cup Roasted Red Peppers---no garlic added
1 small package of White Button Mushroom Caps- sliced as in picture above
1/2 Cup Chopped Flat Leaf Parsley
1 handful of Edamame Beans (had them in fridge...any bean will do or leave out)
3 whole Garlic Cloves
3 Tablespoons Olive Oil
Salt & Pepper to season
1 full handful shredded Pecorino Romano Cheese
1/4 cup of White Wine ( my rule: If you won't drink it, don't cook with it!!!)
 
Directions:
 
First rinse the chops with cold water and snip the extra little fat piece at the end. Then add the Olive Oil to the frying pan and when it's hot enough, salt and pepper the chops on bothe sides then add them to the pan. They should 'Talk" when you add them...This means a sizzle sound.... Then grill them on each side for 3 minutes and add some parsley. After this is done, wait one minute and take them from the frying pan to a dish to settle down until the veggie part is cooked. Next add the mushrooms and garlic to the same frying pan. If you think you need more Olive Oil, don't be afraid to add it. Once the mushrooms are cooked, add the red peppers, asparagus tips, broccoli rabe,beans, salt & pepper and the rest of the parsley. Grill for about 10 minutes. Once everything has married with each other put the veggie mix in its own dish. Re-add the chops to the same frying pan and then add the veggie mix on top of the chops, add wine. Let everything cook for about ten minutes and put your meal on a serving dish and sprinkle with cheese.
