Italian Potato Salad
 
 I wanted to post a side dish that I make when I do burgers and hot dogs with a salad for an easy dinner. I used this side dish for tonight's dinner that I will post later when I plate the dish. I really hate wasting food so I always try to incorporate my left overs into a new invention. Like using my peas from one night as a dish for Peas and Pasta (which I will add also). This is a great side dish in the summer during a BBQ and it's so simple and kid friendly! Let's get started:
 
Ingredients:
 
4-5 Large Potatoes
3 Tablespoons of Olive Oil
Salt & Pepper
Garlic Salt
Parsley
1/4 Cup Shredded Parmesan Cheese ( I used Di Brunno in the picture)
 
 
Directions:
 
Peel potato's, chop into serving pieces and then place them into a pot of lightly salted water. If you wait until all the potato's are peeled, they may start to turn brown so add them into the water immediately after peeling. Boil potato's until fork tender. Strain and drain. Let stand for 10 minutes until cooled. Place potato's into your serving bowl and add the olive oil. Gently toss. Add salt & Pepper, garlic powder (to taste or omit),gently toss once more then add the cheese and parsley to garnish. Serve and Enjoy.
